Ingredients

6 pineapple rings
1 T brown sugar twin
2 T honey
1 C oatmeal, dry
1 t cinnamon
1/2 t nutmeg
1/8 C hazelnuts
1/2 t baking powder
1 C pumpkin puree
1 C milk
1/2 C egg substitute
3 T brown sugar twin
1/8 C hazelnuts
Directions
Preheat oven to 375 F.
Spray 9" pan with Pam.
Place pineapple rings in bottom of pan. Sprinkle with 1 tbsp brown sugar twin and 2 tbsp honey.
Bake 15 minutes.
Meanwhile, in a bowl, combine oatmeal, spices, baking powder and 1/8 C nuts. Sprinkle over baked pineapple.
In separate bowl, combine pumpkin, milk, egg substitute an brown sugar. Pour over oatmeal and spread evenly but do not stir.
Sprinkle with nuts.
Bake 30 to 35 minutes. Serve hot or refrigerate an re-heat single servings for 1 minute in microwave.
