Ingredients

    Bob's Red Mill Organic Whole Grain Quinoa (1/4 C dry = 1/2 C), 3 cup (remove)
    Red Ripe Tomatoes, 1 large whole (3" dia) (remove)
    cucumbers, with peel, raw, 1 cup (remove)
    Onions, raw, .5 small (remove)
    Kalamata, Green Olives, pitted, 4 oz (remove)
    Cilantro, raw, 16 tbsp (remove)
    *Clove of Garlic, 2 serving (remove)
    *Extra Virgin Olive Oil, 4 tbsp (remove)
    Feta Cheese, .33 cup, crumbled (remove)
    *Lemon Juice, .3 cup (remove)

Directions

make quinoa. Let cool. Add everything else in the order listed and mix well. Best if it can sit for an hour. Add a little vinegar if you want more of a kick
