Introduction

Stevia-sweetened, egg free but still sinfully delicious, this makes an awesome finish to a meal or a snack curled up in front of the fire. Makes about 1/2 cup per serving. Ingredients

    2 tbsp cornstarch
    1/4 teaspoon cinnamon
    pinch salt
    1/2 cup skim milk
    1 cup water, divided
    1/2 tsp vanilla
    1/2 tbsp stevia powder

Directions

Combine cornstarch, cinnamon, salt and 3 tbsp water. Mix it into a paste, set aside.
Heat milk and remaining water together in a saucepan.
Add the cornstarch mixture to the saucepan and bring to a brisk simmer.
Reduce heat to low and cook, stirring, until it thickens slightly.
Remove from heat. Add vanilla and Stevia, stirring well.
Cool in individual bowls before serving.
