Ingredients

    8 cups chicken stock
    20 kaffir lime leaves
    4 inch piece ginger, sliced
    8 3-inch pieces lemongrass (white part), bruised or rough chopped
    8 thai red chilis, sliced in half (remove seeds if less heat desired)
    3/4 cup fish sauce
    1/2 cup lime juice

    2 cups mushroom pieces
    6 oz. rice vermicelli
    12 ounces chicken breast meat, cut in thin strips
    2 cups coconut milk

    Chopped fresh cilantro

Directions

Put chicken stock, lime leaves, ginger, hot chilis, lemongrass, fish sauce and lime juice into large pot. Bring to a boil and simmer 10 minutes. Strain out solids.

Add chicken, vermicelli and mushrooms. Return to boil until chicken is cooked through. Add coconut milk. Serve warm with fresh cilantro.
