Ingredients

2 cups lentils, sorted and rinsed
4 cups water
4 tsp. Creole seasoning
2 T. olive oil
2 large Spanish onions, sliced
3 cups cooked brown rice
Tips
Use brown or green lentils for this dish because the orange/yellow/red lentils cook faster and tend to be mushier.
Directions
In a large saucepan, bring 4 cups water to a rapid simmer over medium-high heat. Add the lentils and then reduce the heat to maintain a very gentle simmer. Cook, uncovered, for approximately 20-30 minutes. Add more water as needed to make sure the lentils are just barely covered. Remove from heat and add the Creole seasoning.
While lentils are cooking, heat the olive oil in a large skillet over medium heat. Add sliced onions and cook for about 20-25 minutes until they are soft and golden brown.
When lentils are tender and onions are caramelized, combine the two together and stir well. Serve over
brown rice.
Serving Size: About 6 3/4 cup servings lentils served over 2/3 cup rice
