A quick and spicy, yet surprisingly light meal! A quick and spicy, yet surprisingly light meal!Number of Servings: 4
Ingredients

4 spritzes olive oil cooking spray (I use Mazola.)
5 dashes Creole seasoning or to taste (I use Emeril Bayou Blast)
1/4 cup red bell pepper, thin strips
1/4 cup green bell pepper, thin strips
1/4 cup white onion, thin strips
1 cup low sodium chicken broth
3 tbsp honey mustard (I use Texas Pete.)
2 tsp white wine vinegar
1 tsp thyme, ground
4 smoked andouille chicken sausages, precooked and sliced (9 oz - I used a pack of Hans' All Natural.)
Directions
Heat 4 spritzes of cooking spray in a large skillet over medium heat.
Sautee peppers and onions until just shy of tender.
Add creole seasoning and sausage. Heat for 1 more minute.
Add chicken broth, honey mustard, white wine vinegar, and thyme. Simmer until sauce thickens.
Serve over rice. (Rice not included in nutritional calculations. I used Uncle Ben's Whole Grain Brown. Looks like dirty rice, anyway!)
This recipe makes about two 1 cup servings or four 1/2 cup ladylike servings.
