Ingredients

    4 beets with greens (chop greens)
    3 stalks of celery chopped
    1 large carrot sliced in rings
    1.5 onions chopped
    celery greens from inner stalks chopped
    thyme 5 stalks
    garlic cloves 2
    fresh parsley 1 c shopped
    6 peppercorns
    jalapeno peppper chopped (optional)
    beet juice 4 oz.
    cider vinegar 1/2 c
    4 T salt
    2 t sugar

Directions

Chop all vegetables escept beets. Remove beets after par boiling 5 minutes. Peel outside skin and grate beets. Add back to soup. Boquet garni bay leaf, parsley thyme and pepper corns. After vegetables tender, add beet juice, cider vinegar, sugar and salt to taste.
