Introduction

Number of Servings: 12

Ingredients

    1 Can Cannellini or other white bean
    1/2 Large Avocado
    1 C Frozen Edamame
    1 C steamed Carrot (Colors Matter for appearance)
    1 Medium Sweet Onion
    .5 C Lemon Juice
    1/4 C Extra Virgin Oilive Oil
    2 Tbsp Chopped Cilantro (or other favorite fresh herb)
    3 Cloves Garlic
    1 Tsp Salt
    1 Tsp Black Pepper

Tips

Don't make this with the idea of storing it. The cilantro and avocado do not make this a storable dish.


Directions

Steam Carrots to al Dente
Chop tomatoes and onion, Crush garlic.
Combine all ingredients in large bowl and toss well.
Serving size is 1/2Cup
Will keep for a couple of days only

Serving Size: Makes 6 1 cup servings
