Ingredients

    2 tbs. canola oil
    4 scallions minced
    1 cup grated carrot
    1 tsp fresh/minced ginger
    ¼ tsp red pepper flakes
    2 cups water
    2 tbs. tamari
    1.5 cups jasmine rice
    1 cup frozen baby peas thawed
    ¼ cup firmly packed Thai basil (or regular)
    2 tbs. roasted cashews
    2 tbs. shredded coconut toasted

Directions

1) Heat oil in pan on medium heat
2) Add scallions and carrots for about 2 minutes or until soft
3) Add ginger and red pepper flakes
4) Add water and tamari until begins to boil
5) Add rice (for about 15 minutes)
6) Add peas and basil about 2 minutes before rice is finished
7) Toast coconut and add with cashews on top
