Number of Servings: 4

Ingredients

    1 cup low or non fat mayo

    1 chicken breast chopped

    1/2 celery stalk (for crunch)

    1/4 cup of slivered almonds (if desired)

Directions

Measure mayo into mixing bowl, add chicken and celery that has been chopped finely, add slivered almonds if you like extra crunch. Mix together and chill. Great on sandwiches with whole wheat bread, or on english muffins.

    I added one and a half hard boiled eggs...it turned out really good, and I left out the almonds. - 7/14/07
