Ingredients

Whole Milk 2 cups
half an egg
1.5 egg yolks
Granulated Sugar, 4.5 tsp
Semisweet chocolate, 4 oz
*Instant espresso powder, 1.5 tsp
1/2 fresh vanilla beans

butter on ramekins is not factored into this recipe
Directions
Put milk and bean in small saucepan and bring almost to a boil over low head. Cover, remove from heat and let stand for 15 minutes
Preheat oven to 300F and butter individual serving 3-4 ramekins (depending on size) and put into roasting pan. Whisk together egg, yolks and sugar in a large bowl until thick and pale. Remove bean from milk, scrap out seats and place back in milk. Return milk almost to a boil.
Remove milk from heat, add chocolate and instant espresso powder and stir until dissolved. Stir into egg mixture. Strain into ramekins through a sieve. Pour boiling water into roasting pan until the water comes halfway up the sides of the cups and bake about one hour, until very lightly set.
Transfer cups to a wire rack and let cool. Chill until ready for serving.
