Introduction

Ingredients

    1/2 c quinoa
    1/2 c edemame shelled
    1/2 c roasted dry peanuts lightly salted
    1/4 c roasted pumpkin seeds
    1/2 c craisins reduced sugar (dry cranberries)
    juice of 2 limes
    grated orange zest of one medium orange
    1/2 c fresh orange juice
    1/2 tsp garam masala (pumpkin pie spice would do)
    1/2 tsp sesame oil
    1 c fresh spinach

Tips

If it is too dry for your taste you may add 1/4 c water or orange juice (but don't forget the calories).


Directions

1. Cook the quinoa according to package instructions. For better results soak quinoa for 2 hrs.
2. Wait for quinoa to cool then add the rest of the ingredients and mix well.
