Introduction

These muffins are made with whole grains and virtually no refined sugar. These muffins are made with whole grains and virtually no refined sugar.
Number of Servings: 12

Ingredients

    1 cup Oat flour
    1/2 cup whole wheat flour
    1-2 tbsp dried lavender
    6 packets of stevia
    1 tsp baking powder
    1/2 tsp baking soda
    2 bananas mashed
    1 cup plain yogurt (I used non fat)
    1 flax egg (1 tbsp flax meal mixed with 3 tbsp water)
    1 large egg, beaten
    1 tsp vanilla extract
    1/2 cup blackberries or whatever berries you have on hand
    1/2 cup raspberries
    1 tsp raw sugar (for garnish)
    1 tbsp rolled oats (for garnish)


Tips

These muffins aren't very sweet, so add more raw sugar to the mixture to fit your taste.


Directions

Set oven to 375. Prepare muffin pan with spray or muffin liners.

Whisk dry ingredients together

Mash bananas in a separate bowl, mix in yogurt, flax egg, beaten egg, and vanilla extract until combined. Mix in dry ingredients until just combined. Fold in berries.
Use a scoop or measuring cup to put batter in prepared muffin pan. Before outing in oven, garnish with a sprinkling of raw sugar and a few oats.

Bake for 25 minutes or until done in center.
