Introduction

Sweet and slightly spicy vegan Thai soup! Sweet and slightly spicy vegan Thai soup!
Number of Servings: 4

Ingredients

    1 red onion, chopped
    1 big clove of garlic, finely chopped
    1 tbsp coconut oil
    2 big red bell peppers (300g), chopped
    1 medium carrot, chopped
    2 tbsp red Thai curry paste (mild)
    1 cup/250ml water
    100g ripe mango, diced + more for garnish
    100ml unsweetened soy milk or coconut milk
    100g roasted salted peanuts or peanut butter + more for garnish
    salt to taste


Directions

Sautée onion and garlic in coconut oil till the onion has softened a little. Add chopped pepper, carrot and curry paste and stir. Add water and let simmer for 10min.
Then add mango, soymilk and peanuts or peanut butter. Stir and blend everything in a high speed blender until smooth. Season with salt and serve.
Garnish with Mango pieces and peanuts if you like and enjoy!


Serving Size: makes 2 to 4 servings
