Introduction

This is a low-fat, tabouli-inspired version of my standard grain salad. This is a low-fat, tabouli-inspired version of my standard grain salad.

Ingredients

    6 cups brown rice, cooked and cooled (from 2 cups raw)
    10 medium tomatoes
    1 bunch each fresh parsley and mint, finely chopped
    6-8 large scallions, sliced thinly
    1/4 cup each lemon juice and olive oil
    2 teaspoons salt
    2-5 cloves minced garlic, to taste

Tips

Works with any cooked and cooled grain. Some good additions are other finely diced vegetables (cucumbers, peppers, etc.) or any other fresh herbs you like.


Directions

Mix all together in very large mixing bowl and adjust seasoning to taste.
