Ingredients

    Ingredients:

    4 medium red potatos boiled and cut into small pieces.
    2 stalks of celery cut into small pieces
    1/2 cup of egg beaters scrambled and chopped into four pieces
    1 onion chopped into pieces
    1 medium green bell pepper
    3/4 cup of light mayonaise
    1/2 teaspoon salt
    1/4 teaspoon black pepper
    2 teaspoons Dijon mustard

Tips

Two boiled eggs could be used in place of the 1/2 cup of egg beaters.

If salt is something you are watching you could substitute other seasonings in place of the salt.

You could put 3/8 cup of Greek plain yogurt and 3/8 cup of light mayonaise instead of using all light mayonaise.


Directions

Mix the mayonaise, mustard, onion pieces, celery pieces, green pepper pieces, salt, and pepper together.

Then mix in the potatoes and scrambled egg pieces.

Chill in the refrigerator until you are ready to serve.

Serving Size: This makes 6 large servings.
