Introduction
If you want a fabulously fresh and flavorful Summer Salad, this is the ticket. Grilled Chicken with Baha seasoning, Cilantro and Lime on a bed of Spinach and mixed baby greens, that is topped with Sliced Strawberry, Red Onion, Cilantro and Lime. Ingredients
-
2 Cups Sliced Starawberries
4 cups Baby Spinach, cleaned and stems removed
4 cups Baby Salad Greens
1 small sliced Red Onion
1 bunch Cilantro
2 Limes
4 oz Feta Cheese
1 pkg Grill Mates Baja Citrus Marinade
16 oz Chicken Tenderloin
4 TBSP Sliced Almonds
Tips
This is a great Picnic Salad. You can prepare all of the ingredients and chill in separate containers, then build the salad when you are ready to eat. You can even Grill the chicken and add it hot right on top! The Strawberry "dressing" will last for a couple days, but the strawberries start to get more and more mushy the longer they sit in the lime juice and the cilantro loses is crispness. (although it tastes great, it doesn't look as fresh)
Directions
Add to Chilled Glass Bowl-
-Halved and Sliced Strawberries
-Very Thinly Sliced Red Onion
-Juice of 1 lime
-1/2 of the Coarsely Chopped Cilantro
***Set Aside in Refrigerator to Meld Flavors for 15 minutes to an hour
Sprinkle the Baja Marinade Powder over the Chicken Tenders then cook/brown until cooked completely. Remove from heat and cut into slices. Toss with juice of 1 lime and remaining Cilantro.
***I prefer my chicken to be chilled but warm/hot chicken is also great in this dish.
Prepare your Salad greens. Remove stems and clean. Then divide onto 4 plates. Make sure your salad is completely drained and not soggy.
Divide remaining ingredients in to 4 portions each and add in layers--Chicken, Chilled Strawberry Mix (you should notice lots of liquid melded together, this is your oh so yummy "Dressing"), Feta Cheese and Almonds. ENJOY!!
