Introduction

A simple low calorie soup made with only a few ingredients on hand. Could easily substitute other vegetables and seasoning to your taste and what you have available. Ingredients

    4 cups chopped broccoli
    3 medium potatoes
    1/2 yellow onion
    3 vegetable boullion cubes
    6 cups water
    1tsp Mrs. dash Garlic and Herb seasoning
    1 cup milk

Directions

Peel and chop vegetables and place in a large cooking pot. Add water, boullion cubes and seasoning. Bring all to a boil for 10 minutes or simmer on low heat until broccoli and potatoes are softened. Use a submersion blender to purée the soup. Add milk. Heat through 5 minutes longer.

Serving Size: Makes 8 1-1/2 Cup servings
