Ingredients

    1 package Tofurkey italian sausage links, sliced or chopped
    1 24-oz jar marinara
    1 6-oz bag part-skim mozzarella
    2 tbsp olive oil
    1/2 chopped onion
    1/2 chopped bell pepper
    1 lb whole-wheat penne or rotini

Directions

Boil pasta according to package directions. Meanwhile, saute onion, pepper, and sausage in oil until onion is tender. Pour in sauce and simmer until pasta is done.

Toss sauce, pasta, and most of cheese (reserve some for top) together and pour into a 9 x 13" pan. Cover and bake at 350 until bubbly, about 30 min. Sprinkle with remaining cheese and bake or broil another few min. until cheese is melted and browned.

Serving Size: Makes 8 servings as a main dish, more as a side
