Ingredients

    potatoes - 4 small/medium potatoes
    .5 medium onion
    3 cloves of garlic
    pepper - 1/3 of a pepper
    1 tomato - ripe
    2 small eggplants
    1tbsp safflower oil
    water
    salt, pepper, cayenne pepper and paprika to season

Tips

Great served with some good bread or light salad on the side. Cayenne can be omitted if you don't like spicy.


Directions

saute onion, add potatoes, when they are almost done add eggplant, peppers and after few minutes tomato. Add garlic (minced). Add salt, pepper early, and the rest of the spices at the end. After adding paprika - cover and let it sit on very low heat for few more minutes.

Add water as needed while cooking to prevent burning but don't over do it - water should be mostly evaporated by the end.
