Ingredients

    2 Cups (scant) Chickpeas. cooked ( I cook my own)
    1 TBSP Olive OIl
    2 TBSP Tahini
    3-4 Garlic Cloves (minced fine)
    1 tsp Curry Powder (orig recipe called for Cumin)
    1/4 Cup fresh squeezed Lemon Juice ( about 1 small lemon)
    Salt to taste
    Water to desired consistency/thickness

Tips

I cook my own beans to try and control sodium. But it works with canned beans as well. It has a smoother texture with the canned beans.


Directions

In a small blender (I use my Ninja) put Oil and Lemon juice, pulse until well blended. Add the other ingredients and pulse until it is the consistency you like. Will keep in fridge for 4-5 days.

Serve with raw veggies of your choosing or Pita bread/chips if you would like

Serving Size: Makes 5 servings if you are using as a meal substitute
