Introduction

This recipe has come down our family from my great grandmother, to my grandmother, to my mother, to me. This coffee cake is very moist and tastes great with or without a cup of coffee (I actually prefer it with a glass of low-fat milk). Ingredients

    3 c. Flour
    6 tsp. Baking Powder
    1/2 tsp. Salt
    1.5 c. Sugar
    1/2 c. Shortening (can use low-calorie variations to reduce total calorie count)
    2 Eggs
    1 c. Milk (I use 1%)
    2 tsp. Vanilla

    Filling:
    1 c. Brown Sugar
    4 tbsp. Flour
    4 tsp. Cinnamon
    4 tbsp. Butter
    1 c. chopped nut (if desired - will up the calorie count)

Directions

Preheat over to 350 degrees. Spray 9x13 pan with cooking spray. Set aside.

Combine flour, baking powder and salt. Set aside. Blend sugar, shortening, eggs, milk and vanilla in medium-sized mixing bowl. Add flour mixture gradually until well blended. Set batter aside.

Combine filling ingredients (brown sugar, flour, cinnamon, butter) in a small bowl. *I use my food processor to crumble them together*

Pour half of the batter into the bottom of your greased pan and spread evenly with a spatula. Sprinkle half of the struesel (filling) mixture on top. Repeat with the second half of batter and sturesel.

Bake at 350 degrees for 30 minutes. Allow cake to cool slightly before cutting. Best served warm.
