Ingredients

    1 t olive oil
    1/2 C finely chopped red onion
    1/4 t salt
    1 t finely chopped garlic
    2 lbs finely chopped spinach (about 4 cups)
    1 T crumbled reduced fat feta cheese
    1 t lemon juice
    1 T lemon zest (grated lemon peel)
    Shave of fresh nutmeg (1/8 1/4 t dried)
    5 chopped fresh basil leaves (1/4 t dried)
    Pinch of cinnamon
    1 T toasted pine nuts

Directions

Saute onion in oil until golden. Add garlic and saute 30 seconds until aromatic. Put in spinach and salt; cook just until wilted and tender. Mix in feta cheese, lemon juice, lemon zest, nutmeg, basil and cinnamon; stir thoroughly. Top with toasted nuts. Serve immediately.

    I made this with turnip greens, since that is what I had on hand, it was GREAT!! A definite keeper, I can't wait to try it with spinach, too. - 5/23/08
