Introduction

Spicy and warm root vegetable soup for the fall/winter! Spicy and warm root vegetable soup for the fall/winter!
Number of Servings: 2

Ingredients

    1 leek, sliced
    1 cup sweet potato, cubed *alternatively, butternut squash
    1 carrot, sliced or cubed
    4 cups chicken broth
    1 tsp of olive oil
    1 tbsp of nando's hot piri piri sauce or equivalent
    2 tbsp of sundried tomato paste
    50 ml of non-skim milk

Tips

Works with most root vegetables and pumpkin/squash type things. Vegetable broth can be used and the milk is optional


Directions

Peel and cube the sweet potatoes and carrots
chop up the leek into rounds
In a pot, heat up the olive oil and add the chopped vegetables
Cook for 3 to 5 minutes, then add the tomato paste and piri piri sauce
Cook another 5 minutes, then add broth
Cook on low simmer until the sweet potatoes are done
Add the milk and stir in
Blending optional

Serving Size: Makes 2 large bowls
