Ingredients

1 large or 2-3 small Fennel bulbs
1 kg ripe roma tomatos
1 entire bulb of garlic
1 litre vegetable stock
Tips
This is a rustic recipe, dont be too fussy with skins and can be served hot or cold.
Directions
halve tomatoes and fennel, add splash of olive oil and whole Garlic bulb - unpeeled
Roast for around an hour
leave to cool then remove tomato skins and tough outer fennel pieces.
blend to desired consistancy with Vege stock.
Reheat gently on stovetop and season as desired
