Number of Servings: 24

Ingredients

    12 eggs
    1 3/4 Cups canned pumpkin
    1 Cup coconut oil (cold pressed, unrefined), melted
    1 Tbs. vanilla extract
    1/2 Cup Pure Maple Syrup
    1 Cup Coconut Flour
    1 tsp. sea salt
    1/2 tsp. baking soda
    2 Tbs. Pumpkin Pie Spice
    1 Cup chopped walnuts (or other preferred nut)

Directions

Preheat oven to 350 degrees. Whisk eggs, pumpkin, oil, vanilla and syrup. Sift flour, salt, baking soda and spices and stir to combine. Then mix in chopped nuts. fill lined muffin cups with about 1/4 cup of batter. Bake 35-40 minutes. makes about 24 muffins.
