Number of Servings: 1

Ingredients

    1 large Jalapeno
    1 medium Yellow Squash or Zucchini
    1/4 Cup of Salsa (heat level of your choice)
    3 pats of butter for cooking your veggie
    .5 tbs of Creole seasoning
    Black Pepper

Tips

If you like a lot of heat, replace the jalapeno with a habanero.
If you like a little less heat, use the jalapeno as it is.. just chop it up and go.
If you want light heat, remove the seeds from the Jalapeno.
Less heat yet, remove the seeds from the Jalapeno and remove the Pith too (the white soft portion of the connective tissues that the seeds hold onto inside the pepper)
No heat at all... Replace the Jalapeno with Bell Pepper.


Directions

Finely chop the Jalapeno and the Squash and cook them over high heat in the butter until they're slightly softened.
Season the veggies in the pan and lower the temp to medium after coating with the spices.
Add the eggs and salsa and begin stirring while cooking to solidify the eggs.

Serving Size: approximately 2 - 1 cup servings or 1 very large serving
