    6 med eggs
    1/4 cup water
    1 Tablespoon Extra Virgin Olive Oil
    1 Tablespoon butter
    1/4 cup onion, diced (red, white, or green)
    1/2 cup zucchini, diced
    1 Figi's Beef Stick (mini), diced


This is a great breakfast item, but is also very good in a tortilla with cheese and hot sauce added.


In large bowl scramble eggs and water together. Set aside. In frying pan melt EVOO and butter over med heat. Add onion, zucchini, and beef stick cooking until onions are light brown and zucchini is heated. Add egg mixture. Stir and cook until eggs are done. Add salt and pepper to taste.
