Introduction

I added silken tofu for extra protein to balance out the carbs in the potatoes... so that we didn't need to add another side dish (like bread or a meat of some kind) for it to be a balanced and hearty meal. It turned out great! Ingredients

    I.) Sautee in Chicken Broth:
    1/2 yellow onion
    4 cloves of fresh garlic

    2.) Add and sweat in 1 inch of chicken broth:
    3 whole leeks
    4 stalks of celery
    685 g white potatoes (about 2 big, 3 small)

    When Potatoes are soft add:
    1 cup of 1% milk
    1/2 cup heavy whipping cream
    1/2 package of silken tofu
    1 tbsp of ground black pepper
    1 tbsp of Italian Seasonings
    1 tbsp of Salt (Add this if you used sodium-free broth like I did!)

    When you serve it add a dalop of whipping cream and 1/2 oz of grated cheddar cheese
