Ingredients

    1 whole egg
    3 egg whites
    1/2 cup cubed and baked sweet potato
    2 tablespoons shredded parmesan
    Johnny's seasoning salt
    Spice Islands Chipotle Pepper

Tips

Once you have this down, you can add any kind of seasonings or vegetables you like. I love putting mushrooms and cheese inside the egg mixture too!


Directions

1. Cut 1 whole sweet potato into 1/2 inch cubes (about the size of a marble) and place on baking sheet and spray with olive oil and toss evenly. Sprinkle Johnny's seasoning salt, pepper, and a light amount Spiced Islands Smoked Chipotle Pepper on top.

2. Place in a preheated 350* oven for 10 minutes. Pull out and toss, and cook for another 5-10 minutes until golden brown.

3. Whip 1 whole egg and strain 3 egg whites into a bowl, and whisk until mixed.

4. Lightly spray a small frying pan with Olive Oil, and set heat to medium; pour egg white mixture into pan. Do not scramble, let the bottom portion cook.

5. Once potatoes are done, measure 1/2 cup, and place evenly in egg mixture.

6. Turn on oven to broil, high.

7. Once bottom half of eggs are cooked (about 5 minutes) then place the frying pan in the oven, and cook the top portion. Do not leave the oven; it will only take a few minutes to cook the top layer of egg.

8. Pull out once firm (not golden) and put shredded parmesan cheese on top, and broil again for another 1-2 minutes until golden brown.

9. Pull out, let cool.

10. Try not to inhale it whole.
