Ingredients

    1/2 cup 1% cottage cheese
    1/2 cup sweet potato - baked and cooled
    1/2 oats
    1 cup egg beaters
    2 tsp baking powder
    1 TBSP brown sugar packed
    1 tsp vanilla

Directions

Put 1 cut of oats in blender and blend until oats turn into powder.
Turn off blender and add 1 cup of egg beaters, sweet potato, cottage cheese, sugar, baking powder and vanilla. Blend until batter is mixed.
Heat a nonstick griddle. Spray the pan with Pam. Ladle 1/4 cup of batter. Flip once sides of pancake start to look dry around the edges.


Serving Size: Makes 10 pancakes (1/4 cup of Batter)
