The hotel my husband and I stayed at in Chiapas Mexico served Green beans and Potatoes every day for Breakfast. This was as close as I could come to a similar recipe. Ingredients

    2 tsp chili powder
    1/2 tsp dry mustard
    1 cup chopped onion
    2 cloves minced garlic
    1 tsp cumin
    1 tsp coriander
    1/4 tsp ginger
    1/4 tsp turmeric
    1 1/2 lbs red potatoes cut into 1/2 inch pieces
    1/2 cup water
    3/4 tsp salt (optional)
    8 oz green beans cut into 1 inc pieces
    1/4 cup cilantro

Tips

My mother lives with us and she hates cilantro so we use fresh parsley instead of cilantro.
*I never use salt in cooking.
**During the winter I use frozen green beans and cook just until thawed.


Directions

heat oil in large non-stick skillet over medium high heat. Add onion and saute 2-3 minutes until soft. Stir in mustard, chili powder, garlic, cumin, coriander, ginger and turmeric. Cook mixture for 30 seconds stirring constantly. Stir in Potatoes and cook 2 minutes. Add water and salt*, bring to a simmer. Cover and cook for 8 minutes or until potatoes are almost done. Add beans and cover and cook until beans are done to your liking. I cook for about 3 minutes.**
