Ingredients

    3 Tins of chopped tomatoes
    1 large onion chopped
    mixed peppers chopped
    I tin of chickpeas
    1 tin of kidney beans
    3 tablespoons of balsamic vin
    1 tablespoon of cumin power
    1 tsp of extra hot chilli
    1 tablespoon of basil

Tips

Due to the kidney and chickpeas this soup is really filling.


Directions

empty chopped tomatoes into large saucepan and add balsamic vinegar with a bayleaf. Once tomatoes start simmering add onion, peppers and add spices to your taste. Rinse chickpeas and kidneys and add along with vegetable stock to suit your own preference of thickness (I add around 1 litre) and cook for around 40 mins. Once cooled split into 6 portions and freeze
