Ingredients

    1 c Quinoa (uncooked)
    1.14 pounds Raw Shrimp
    2 tbsp cajun seasoning
    1 tbsp paprika
    1 tbsp Italian seasoning
    2 tbsp butter
    1 tsp better than bouillon
    1 c Greek Yogurt
    1/3 c skim milk
    3 oz cheddar cheese
    4 cloves garlic (minced)
    1 tbsp corn starch
    1 tbsp Worcestershire sauce

Tips

You could reduce calories and fat by using low fat cheese and a low fat margarine or non-stick spray to cook the shrimp.
The spice mix is very spicy, so season to your tastes.


Directions


Serving Size: Makes 8 servings
Cook quinoa according to package directions. Once cooked, while still on the stove, add in milk, 1/2 c of Greek yogurt, and cheddar cheese.

Coat shrimp in spices and sautee in 2 tbsp butter with minced garlic. Remove the shrimp and add chicken stock (or bouillon) and the other 1/2 c of yogurt, cornstarch slurry and Worcestershire sauce bring to a boil for one minute.

Serve shrimp and sauce over cheesy quinoa.
