Ingredients

1 box Red Pepper and Basil Quinoa
3 mini sweet peppers
1.5 cups corn
1.5 cups black beans (or chickpeas)
1/4 cup chopped fresh cilantro
1 medium tomato, chopped
3 cloves garlic, chopped fine or minced
1/2 medium onion
Dressing:
1/4 cup olive oil
1 Tbsp. cumin, dried
1 tsp. salt
1 Tbsp. lime juice
Tips
Serve with chips for an easy snack, or for a quick on -the-go meal.
Directions
Cook quinoa according to package instructions. Put in fridge to cool.
Chop peppers, onion, cilantro, tomato, and garlic into small pieces and put in bowl with beans and corn.
Mix dressing ingredients.
Mix quinoa into chopped vegetables/bean mixture and toss with dressing.
Refrigerate.
Serving Size: makes approx. ten 1/2 cup servings.
