So easy to do and so good to eat! So easy to do and so good to eat!

Ingredients

    2 cans black beans, drained and rinsed
    2 cans whole kernal corn OR 1 pkg frozen corn
    1 can enchilada sauce
    6 chicken breasts, cooked and chopped
    1 1/2 quarts chicken stock
    1 cup rice

Tips

Watch your liquids--you may need to add more water as the rice absorbs the available stock.


Directions

If you use frozen corn, defrost it. Put all the ingredients in the crock pot, then set on low and cook until rice is cooked through.
