Introduction

Ingredients

    1 large butternut squash, peeled, cubed, and seeded
    2 apples, seeded and chopped (leave the skin on!)
    3 leeks, edible portion (trim off the tough top dark green part)
    4 shallots, chopped
    .25 cup coconut oil
    6 cups veg broth
    1 can light coconut milk
    2 T curry powder
    Salt and pepper to taste
    Cilantro for garnish

Directions

In a large pot (biggest one you have), heat coconut oil until melted. Saute the shallots and the leeks with a little salt until they're softened. Then, add everything BUT the coconut milk - ensuring that liquid covers everything (if your squash is particularly large, you may need to add more broth or water, no biggie). Bring it all to a boil, then lower to a simmer and cook about 25 minutes - you'lll know it's done when a squash cube easily smooshes with a wooden spoon. Add the coconut milk, then use a blender to puree the whole thing. Add salt, pepper, and/or additional curry to taste... garnish with cilantro, if desired.
