Ingredients

    Olive Oil, .5 tbsp
    red wine Vinegar, 1 tbsp
    Garlic, 1 clove, minced
    Kalamata, Green Olives, pitted, 1 oz, chopped
    Onions, raw, .25 small
    mint, 2 tbsp
    Dill weed, fresh, 3 sprigs
    Lentils, .75 cup
    *Lemon Juice, 1 fl oz
    *Peppers, sweet, red, fresh, .5 medium (approx 2-3/4" long, 2-1/2", diced
    Spinach, frozen, .5 package (10 oz) yields, thawed and squeezed dry
    Feta Cheese, 0.5 cup, crumbled


Directions

simmer lentils in water (enough to cover by 2 inches) for 20-ish minutes. Drain and cool.

whisk vinegar, garlic and olive oil together.

Combine all ingredients into one bowl

    Very Good
    OK. I made the recipe and it was very good! i definitely will make it again. I used red lentils (they cook faster), the whole 10 oz package of frozen spinach, and the whole red pepper; also I used fresh Basil and Chives instead of Mint, and Raspberry Vinegar. I omit the olives (didn't have any) - 4/23/08
