Introduction

A delicious slightly eggy muffin -- decadent chocolate flavor at breakfast, without totally exceeding a reasonable carb count! A delicious slightly eggy muffin -- decadent chocolate flavor at breakfast, without totally exceeding a reasonable carb count!
Number of Servings: 24

Ingredients

    12 eggs
    1.75 cups coconut milk
    7/8 cup (14 Tbsp)coconut flour/ meal
    6 Tbsp. carob
    2-3 tsp. vanilla (optional - but good!)
    1 Tbsp. cinnamon (optional)
    1 rounded tsp. baking soda

Directions

preheat oven to 340 - 350 degrees. Beat eggs for one minute. Add coconut milk; beat again. Add coconut flour, baking soda, and carob, cinnamon & vanilla. Mix well.
Scoop into muffin tins, using parchment paper liners.
Bake 16 - 20 minutes, until top is springy but well set.

Serving Size: Made 20 muffins
