Ingredients

    1 bag frozen corn (10 oz.)
    1 can black beans
    1-2 jalapenos - diced
    1 tomato diced
    handful of cilantro finely minced
    1-2 limes juiced
    Salt
    Black pepper

Tips

You can let it sit and the peppers and cilantro will get more flavorful. You can also add cumin to enhance taste.


Directions

Pour 1 10 oz. bag frozen corn into a collander.
Add one can of black beans - rinse both with water. This will rinse off beans and thaw corn.
Add diced jalapenos and diced tomatoes
Gently fold in cilantro and lime juice.

Serving Size: Approximately 8-10 servings of approx 1/2-3/4 cup
