    1/2 cup extra virgin olive oil
    4 tsp Champagne Vinegar
    1 tsp Grey Poupon Dijon Mustard
    1/4 scallions sliced
    2 cilantro fresh, chopped
    1 lime peel grated
    1 g black beans drained & rinsed
    1 cup corn kernels
    1/2 cup red pepper diced
    1 fully ripe Avocados from Mexico halved, pitted, peeled and diced


In large bowl, whisk together first three ingredients for salad dressing,
Add scallions, cilantro and lime peel, mix well.
Stir in beans, corn and red pepper.
Add Avocado; toss gently.
Season with salt, if desired.

Serving Size: Makes 4 - 8 servings
