Ingredients

    1 Tilapia fillet
    1/2 large bell pepper, any color
    1 medium yellow squash
    salt
    pepper
    garlic powder
    herb mixture
    EVOO

Directions

In a frying pan, heat extra-virgin olive oil on a low setting. Chop up pepper and squash into small cubes. Once the oil is heated, add the chopped pepper and squash, plus salt, pepper, and herb mixture (I use Aldi's brand) to taste. Let it cook down, approximately 10 minutes, while stirring occasionally. Once the vegetable mixture is done, set it aside. Rub the tilapia fillet on both sides with garlic powder and herb mixture. Place tilapia in the same pan the veggies were cooked in. Don't worry if the EVOO has cooked down, it isn't needed. Cook the fish, flipping once. Wait until the fish is cooked all the way through before serving. The time may very depending on the fillet. Plate the tilapia with the veggie mixture on top, and enjoy!
