Ingredients

1 C chocolate chips
1/2 C coconut oil
1/2 C light corn syrup
1/4 C light brown sugar
1/4 C granulated sugar
1/4 t salt
1 t vanilla extract
1/2 C sweetened, shredded coconut
1 C sunflower seeds, unsalted
2 3/4 C rolled oats
2 1/4 C crisp rice (Rice Krispies)
Tips
If the sugar mixture begins to bubble, remove it from the heat. Be very careful with the hot sugar mixture!
I slightly chop the coconut and sunflower seeds in the food processor. The bars hold together better with smaller pieces.
Directions
Line a 9.13-inch cake pan with foil. In a medium sauce pan combine the coconut oil, corn syrup, brown sugar, granulated sugar, and salt over low heat. Remove the sugar mixture from heat. Add the vanilla extract. Stir to combine.
Meanwhile, in a separate large bowl add the shredded coconut, sunflower seeds, oats, crisp rice, and chocolate chips. Toss well to combine evenly. Add the sugar mixture and mix well. Scrape into the foil-lined pan and press down on the mixture firmly to compact (I used the back of a measuring cup). Cover and refrigerate until firm. Remove bars from pan, peel away the foil and cut into bars.
