Introduction

Use about 10 medium baking potatoes. Yield about 8 cups. Use about 10 medium baking potatoes. Yield about 8 cups.

Ingredients

    10 medium baking potatoes, peeled
    4 cloves garlic
    1 bay leaf
    1 stalk celery
    1/2 tsp salt.
    3 Tbsp. olive oil
    1 cup unsweetened, original flavor almond milk
    chives
    pepper

Directions

Boil potatoes with garlic, celery, bay leaves, and garlic until potatoes are soft.
Drain. Remove bay leaf and celery. Can leave or remove garlic.
Using a mixer, blend potatoes, hot milk, chives, salt, pepper, and olive oil until smooth and creamy.

Serving Size: Makes 16 1/2-cup servings (or 8 1-cup servings)
