Ingredients

    2 c. wheat*
    2 c. oats*
    1 tsp baking powder
    1tsp baking soda
    1 apple
    2 bananas
    1/4 c. honey
    2 eggs
    2 tbsp olive oil
    1 c. blueberries

    * I actually use a whole grain mix that I got at the bulk food store but don't have the nutritional info on that

Directions

Grind your grains into flour ( you can do this in a wheat grinder, coffee grinder or blender. In a bowl combine flour and baking powder and soda. Puree apple and bananas and add to dry ingredients along with honey and eggs and olive oil. Mix thouroughly. Add blueberries and then spoon into muffin tins. Cook in a 350* pre-heated oven for about 15 mins. until done. Makes about 18 regular size muffins.
