Ingredients

2 tsp Olive Oil
4 links (12oz) turkey italian sausage
1 jar (12oz) roasted red peppers drained
1 can (6oz) black olives drained
1/4 cup thinly sliced green onions
2 medium zucchini 9-10 inches long
1/4 cup basil pesto (homemade or store bought)
1/2 cup purchased vinegarette (for less carbs look for a dressing with the least amount of carbs/sugar)
Fresh ground pepper to taste
Directions
Cook sausage over medium heat until nicely browned and cooked through
whisk together the pesto, vinagarette, ground black pepper for dressing
Drain red peppers in colander, then pat dry and cut into bite sized peices. Drain the olives. Thinly slice enough green onions to make 1/4 cup
Wash zucchini and cut off both ends, Make small slit in zucchini so makes smaller pieces in spiralizer - use large noodle blade.
Slice sausage int o thin slices. .Put noodles into a bowl big enough to hold all ingredients, stire in desired amount of dressing to moisten all of the noodles then gently stir in sliced sausage, red pepper pieces, olives & green onions.
Serve right away or chill before eaten.
Best when freshly made but still good overnight in the fridge.
