Introduction

Ingredients

2 cups cooked Quinoa
1 large lemon, zested and juiced
1 tsp coriander
1 tsp cumin
1 tsp chili paste (or 1 tsp chili flakes)
1 tsp chili oil
1/4 C cilantro chopped
1/4 C extra virgin olive oil
2 TBL honey
6 C kale leaves chopped and blanched
1 C black beans
1 large carrot shredded
1/2 red pepper
1/2 yellow or orange pepper
3 green onions chopped
1 avocado
Tips
Mix seasonings to taste in dressing prior to mixing with the salad ingredients. I reduced the amount of olive oil and honey the original recipe called for and I increased the seasonings.
Directions
1. Cook quinoa to packed instructions.
2. Zest and juice lemon
3. Add lemon juice and zest to a bowl with coriander, cumin, chili paste, and cilantro. Whisk. Drizzle olive oil and honey, whisk briskly.
4. Chop kale and add to blow along with remaining ingredients.
5. Toss dressing and ingredients well.
