Introduction

Ingredients

    3 medium baby zucchini, grated and squeezed dry
    4c rice Chex cereal, processed to make approx 1 1/4c crumbs
    1/2c parmesan cheese
    3 eggs
    2 cloves garlic, minced
    1/8 t nutmeg
    1 t paprika
    1/4 t salt
    1/4 t pepper
    3 T olive oil

Directions

Grate zucchini and squeeze out excess water; use food processor to grind rice Chex into crumbs; mix all ingredients except the olive oil until moist and the zucchini is evenly coated. Take approx 2-3 Tbsp of mixture and form approx 12 patties.
Heat olive oil in pan. Once heated, add patties and cook until golden brown. approx 5 minutes per side.
