Ingredients

    1 1/2 cup black eyed peas
    1 large cucumber, chopped
    1 small red onion, chopped
    4 medium tomatoes, chopped
    1 jalapeno, minced
    1/c cup cilantro, chopped
    2 cloves garlic, minced
    1/2 cup vegetable or olive oil
    1/4 cup lemon juice
    salt and pepper to taste

Directions

Mix together and marinate in refrigerator for 30 minutes before serving.
