Ingredients

    2 - 8.5 oz cans artichoke hearts (drained & chopped)
    4 tbls. - shallots (chopped)
    4 tbls - green bell peppers (chopped)
    4 tbls - butter (salted)
    6 tbls - flour (white)
    1 cup - half and half
    2 tsp - powdered chicken stock
    1/2 tsp - seasoned salt
    1 lb - lump crab meat
    1/2 cup - sliced pimento olives

Directions

Cook onions and green peppers in butter until soft. Blend in the flour and slowly stir in the half & half. Add the chicken stock base. Cook and stir until the sauce thickens. Add salt. Bring the sauce to a boil. Add the artichoke hearts, crab and olives. Turn into a casserole dish (top with croutons - optional) and bake at 400 degrees until top is crisp and lightly brown. About 20 to 30 minutes.

    ~sigh~ Has two of my favorite things in it, so should have been wonderful - bland, too thick, tasteless. And WAY too high in fat and calories and effort for the result. - 5/28/08
